Bhindi masala for beginners...
Wash 1kg bhindi (lady fingers) thoroughly enjoy under water. Cut into small pieces as shown by n the picture, Slice two onions, three finely chopped green chillies( add green chillies According to your tate buds).
Heat a kadai or pan add three table spoon of mustard oil, one TSP of jeera(cumin), two dry red chillies for tempering when you it's colour changes add the onions into the kadai fry the onions on high flame for two minutes, after two minutes lower the flame, and add the bhindis mix it well with the the onions and fry for five minutes on medium high flame, after five minutes start adding all the masalas, salt to taste, one TSP haldi powder(turmeric), one TSP dhaniya powder (coriander powder), one TSP jeera Powder (cumin powder), one third TSP chilli powder, one TSP amchur powder and mix them well and cover for five minutes and let it cook in low flame. After five minutes uncover the bhindis and stir nicely on medium flame and then cover it for five minutes on low flame, after five minutes uncover the bhindis and stir and fry on medium flame for another five minutes it will turn crispy slowly with a aroma.
Then your spicy bhindi masala is ready to serve, enjoy your bhindi masa with hot roti or parathas
