Kurkuri bhindi/ crispy okra fry...


Ingredients

For making kurkuri bhindi or crispy okra we need 500 gems of bhindi or okra. 1/2 tsp spoon turmeric powder, 1/2 tsp dried mango powder, three tbsp of besan or chickpea flour, salt to taste, spicy red chilli powder according to taste,one tbsp of rice flour, 1/4 TSP of Black pepper Powder. And oil for deep frying.

Method

The most important thing for making perfect crispy bhindi is to avoid moisture. Any kind of moisture can make you bhindi or okra soft it will not remain crispy. Now wash the bhindi or okra nicely and dry them properly with a kitchen towel, so that no moisture left. Now cut the head and bottom, and then cut the bhindi length wise and remove the seeds. As shown in the image. And let them air dry for 5 minutes.

Now put them in a bowl, add salt according to taste, turmeric powder, kashmiri red chilli, spicy red chilli, dried mango powder, black pepper Powder, besan or chickpea flour and rice flour (donot add any water or oil). Mix them and set aside for ten minutes. (If you fry them immediately all the masala will mix with the oil while frying and you will be left with taste less bhindis) after ten minutes you will see that the bhindis or okra will release it moisture and in that moisture all the masala will coat the bhindi or okra nicely. Mix them with hand.  Now heat a wok or kadai for deep frying. When the oil is medium hot, put the bhindis in oil in small batches. And don't fry them on high heat only in medium heat. When the bhindis are  nice and crispy take them out in a plate . And sprinkle some salt and pepper of you want. Ready to serve ๐Ÿ˜‹
