For the feeling we need 1 cup sattu. 1 onion finely chopped, 4 green chillies finely chopped, 1 inch ginger finely chopped, 1/2 tsp ajwain, red chilli powder according to your taste, salt according to your taste, 9 to 10 whole black pepper corns, amchur powder ( dried mango powder) or lemon juice and 6 to 7 cloves of garlic finely chopped.musturd oil.

For the dough we need 1 cup of wheat flour, 1 /2 tsp turmeric powder and water to knead the dough and salt.

For the chokha we need 1 big size brinjal, chopped onions, chopped green chillies, 1 tomato, salt and mustard oil.

Method:-

Take a mixing bowl, add wheat flour , pinch of salt  and now gradually add water and knead the flour into a soft dough. And let it rest for at least half and hour. 

Take another bowl and chana sattu, chopped onions, chopped green chillies, chopped ginger, 1/2 tsp ajwain, red chilli powder, salt, black pepper corns, amchur powder or lemon juice chopped garlic. And add 1 tbsp of mustard oil and mix well. And keep it aside.

 Now turn on the stove put a jali or net on the flame to roast the brinjal. Or of you don't have so, you can use a tawa also. Heat the tawa nicely poke the brinjal with knife, rub some Mustard oil on the brinjal and do the same with the tomato poke with knife and rub with oil and place it on the hot tawa on medium heat. Until dark and crispy skin. It hardly takes 15 minutes or 20 minutes depends on the size of the brinjal. Take out the tomato early of it is done.  After the brinjal and tomato is completely roasted take it out in a plate, let it cool slightly and slowly peel out the skin. Now smash it with fork or hand. Ad salt to taste, chopped onions, chopped green chillies and drizzle of raw mustard oil. Our chokha is ready. 

Now let's make our litti after 1/2 hour the dough will become soft and firm. Kneed the dough one more for 1 minute. And take out some dough ( size of a ladoo) smoothen it into your palm and make a small katori like shape and fill some feeling and seal the dough and make a ball. Remember don't fill to much filling otherwise filling will come out of the dough. Now heat a pressure cooker, remove the whistle add 1 TSP of ghee. ( Adding ghee is must in pressure cooker otherwise litti will burn) now place the littis maintain distance between the littis. On low flame let it cook. After every 5 minutes turn the littis. Untill golden brown. After its done. It's ready to serve.
